Garlic Mashed Potatoes
A side course this week. Almost nothing makes a home cooked meal like some garlic mashed potatoes. This recipe makes a lot, so adjust accordingly.
Ingredients Needed
5 lbs russet potatoes
1 garlic bulb
1 stick of butter
Milk
Salt
Pepper
Olive oil
Supplies Needed
Square of foil
Knife
5 Quart dutch oven w/lid
Electric mixer
Large mixing bowl
Directions
1) Preheat oven to 350 degrees
2) Cut the top off garlic bulb, place in center of foil and drizzle a little olive oil over the open bulb. Bring up the edges of foil, and wrap closed. (will look like a Hershey's Kiss)
3) Place directly on oven rack for 1 hour.
4) Cut potatoes into 1 inch pieces. Keep the skin on.
5) Place potatoes in dutch oven, cover with water, put lid on, and boil about 30 minutes until soft.
6) In a large mixing bowl, on medium speed, combine potatoes, roasted garlic cloves, stick of butter (melted), salt and pepper to taste and milk to desired consistency.
